Xilurou (Chinese: 西魯肉; pinyin: Xīlǔròu; Tâi-lô: se-lóo-bah) is a specialty dish of Yilan, Taiwan.[1] Despite the literal rendering of its name, it is essentially a kind of assorted thick soup (什錦羹), characterised by a lightly thickened broth and a mixture of meat and vegetables.[2]
Ingredients
[edit]Common ingredients include shredded pork, dried shrimp, egg crisps (deep-fried egg, Chinese: 蛋酥), and vegetables such as napa cabbage, shiitake mushrooms, carrots, and bamboo shoots.[3]
Preparation
[edit]A bed of napa cabbage is placed at the bottom of the bowl.[4] An egg element (deep-fried egg/egg crisps) is set on top.[5] A starch-thickened sauce made from shredded pork, shiitake mushrooms, carrots, and other ingredients is then ladled over to finish the dish.[6]
